Clear, radiant skin starts from within, and what better way to nourish your complexion than with wholesome ingredients like sweet potatoes? Sweet Potato and Spinach Bowl

Ingredients:
1 large sweet potato, peeled and diced
1 cup quinoa cooked
2 cups baby spinach
1 avocado, sliced
½ cup cherry tomatoes, halved
¼ cup pumpkin seeds
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste

Instructions:
Preheat the oven to 400°F (200°C).
In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. 
Spread them out on a baking sheet and roast for 20-25 minutes or until tender and lightly browned.

While the sweet potatoes are roasting, cook the quinoa according to package instructions.

In a small bowl, whisk together the remaining tablespoon of olive oil and lemon juice to make the dressing. Season with salt and pepper to taste.

Once the sweet potatoes and quinoa are cooked, assemble your Sweet Potato & Spinach Bowl. Divide the quinoa among serving bowls and top with roasted sweet potatoes, baby spinach, avocado slices, cherry tomatoes, and pumpkin seeds.

Drizzle the lemon dressing over the bowls and gently toss to combine.

Serve immediately and enjoy the nourishing goodness of this sweet potato and spinach bowl!
